Easter/Zoo pictures

Ok- you can bring the kiddos over. We went to the zoo on Easter so here are some animal pics!!

Pelicans. We watched them for quite awhile because they were chasing the ducks that were in there.

The Bald Eagle!!

Scott LOVES hanging out with the penguins.

Ok, so this isn't the best quality picture- but I HAD to post it cause his eye looks super creepy!

The octopus was out!! We never get to see this thing, maybe it's a squid. Anyhoo-- it's always curled up in a dark corner, we've never gotten to see it like this before.

This is the wolverine. He's almost constantly running back and forth, I finally got 2 pictures of him, after a WHOLE LOT of bad pictures, and ones of just his tail lol

Bears

Snow Leopard. He actually got in a bit of a tift with the other snow leopard when we were there. The other one was grumpy. This one went up to where the other one was and the other one let out this horribly loud growl! Scary sounding! Then started batting at him with his paw. Then this one went back down to the bottom of the exhibit where he ate a hard boiled egg! Wouldn't have thought leopard ate eggs...

Yay! I got all three lions in! The one to the left is Docha, the male. Then the other 2 are sisters- they are named, Bakari and Abena. Just some fun lion trivia :) This exhibit is actually quite new, it just opened last summer. It was weird too, I know Scott and I went to the zoo once or twice during the winter, and the lions were still out. I think they kept them all year!

The sisters

Easter dinner :) The ham turned out perfect! Last time I made ham I left it in too long after putting the glaze on and it burnt, but not this time!! Then we had the rice pilaf (see recipe below), then we had fresh pineapple and brown and serve rolls. Scott makes these rolls the same way his late-grandmother made them, in a paper bag in the oven. Scares the crap out of me, makes me feel like the bag will start on fire, but the rolls always come out wonderful. Crispy on top, soft in the middle.

Our dyed eggs! I love that Ally and Steph you both have pictures of eggs your children dyed. Well we are proud of ours as well. Although we are a bit bummed we didn't get the pack with the sticker faces like last year, those were cool!

Scott loving the dyed eggs :)

Here is the rice recipe that we had for Easter dinner. I know Steph requested it. Sorry it took so long, I wanted to make sure it tasted good before posting it, and it was good. It isn't as good for leftovers, but it wasn't that bad.

Rice Pilaf w/ oranges and walnuts
1 1/2 c. sliced button mushrooms
1 c. sliced celery
1 c. finely chopped onion (Scott doesn't like onion, so I omitted this)
1 Tbsp. cooking oil
1 14oz can chicken broth
2/3 c. water
1 6oz pkg long grain and wild rice mix (I use Uncle Ben's. Usually I get quick cooking, but I did NOT use quick cooking for this recipe)
1 11oz can mandrain oranges, drained
1/2 c. chopped toasted walnuts (I didn't toast mine, just used them straight out of the bag)

In a large saucepan, cook mushrooms, celery and onion in hot oil about 5 minutes or until tender. Add broth and water, bring to a boil. Stirl in wild rice and season packet. Reduce heat. Coveer and simmer 25-30 minutes or until rice is tender. Remove from heat. Stir in oranges and walnuts.

My poor neglected blog....

Ok, so I'm not very good at making the time to update this. Oh well, I have to wait for our Easter breakfast casserole to get out of the oven, so I have time now.

Updates, updates.... Lets see. Well, from what I can remember-
- We struck out big time with a cake person we went to go see. We talked back and forth via email about dairy free cakes, she said she can do it, we get there and after tasting one of the samples and mentioning how difficult it's been finding someone who can make a dairy free cake, she tells us the samples are not dairy free. Then she gives us a quote for a 4 layer cake, not decorated- cause we are just having flowers put on it, said the price would be $340, then sent a quote with tax and some other charges added in, it was $365- worked out to be over $3 per slice! No way! Not gonna happen. I just emailed another lady who said she can do dairy free. She actually owns a baker in GR that does mainly gluten free, but said she can do dairy free also. She was out of town til tomorrow, so hopefully we'll be able to meet with her sometime. We are actually thinking of doing a small cake that would be dairy free and then doing sheet cakes, I don't really want to, I want a big nice cake- but if we get another crazy expensive quote, it's not gonna happen.

-We ordered our Save the Date magnets, and that was a major pain in the a**. I don't really like this company at all. They have very poor customer service. I'd been emailing back and forth with a few people from there, I always answered their questions, but rarely did they answer mine. We had ordered the magnets separately from the attachment cards and envelopes. They apparently did not get the other order, which I find out a month later. This is stupid because I had emailed quite a few times asking about the order and they never told me they didn't have the order, they just ignored the questions. We also mailed them 2 separate checks. They certainly never questioned that. Which brings me to my next problem, we sent them the checks a month ago, and they still have not cashed them. Major pain!!! Oh well, they said the magnets should be shipped out to us on Monday, so hopefully they are fine and we can move on.

-We found flower girl dresses!! Mom, I sent you, and Scott's brother/sister in law an email with these same pictures. These will be the dresses Alexis, and Scott's niece, Naomi will wear. We got them for $9.99 a piece at Meijer.

- I don't know if I put it on here before, but we do have a caterer now. We really like them too! The owner is super nice! Here is the menu:

Gazpacho (Dad will be making this)
Pineapple Luau display- LOVE IT :)

Sparkling white punch, garnished with oranges

We also bought some plates from Sam's Club when we were in Lansing before, but I don't know that we are going to keep them. Turns out when we were transporting them from Lansing to Grand Rapids somehow some of them were damaged, cracked, broken, etc. Well Scott took that one back and got another one, after seeing other damaged ones on the shelf. Well we get it home look at the rest and there is a crack in another one. I told him, I am just not interested in babysitting these plates, if they are that darn fragile, I don't want them. So we are looking at a couple of options with our caterer. They are going to email me how much they would deduct if we brought our own plates, and also how much extra to add if we switch from the foam plates (which are included) to a clear plastic plate.

-The owner's of my company are back from Florida. Their flight got in Friday at about 6 pm, so I haven't seen them yet- but this will throw a serious wrench into my daily activities, but when they left my days were a bit screwed up for a while too, I just gotta get back into the swing of it. See for most people, it won't affect their days, but I'm their assistant, so when they say jump- well, you get the idea. Before they left they hired some decorators to re-do our offices. For the most part it looks fine, but there are some problems with it, and since they have not seen it, only heard about it, that should make for a very interesting Monday. Be thinking about me around 10:30 am, that is usually when they come in. If they don't like it..... ack- don't even wanna think about that.

-Saturday Scott and I went to Grand Haven. We went to the Grand Haven city beach, then decided we wanted to go check our North Beach Park. Grand Haven City Beach was the original spot we were thinking we'd get married at. Then late last fall we found North Beach Park and thought that was a definite possibility. Well, when we went yesterday that thought was pretty much cemented. It was horribly windy yesterday, I'll start off my saying that. So, even though it was in the 50s and sunny, the wind made it feel like the 30s. We were NOT dressed for it at all. It was sooo cold. But at the city beach there was a decent amount of people there. We went to North Beach park and there was one other person. By the time we left here were 4 cars there total, and this was at 2 pm. We decided that if we have the wedding at 4:30 pm, that would be the best place to go. Obviously we are going to head out there as much as we can between now and September, just so we can gage the best time of day and spot on the beach. Right now they still have their snow fences up, but we did see that the public bathroom they have at the beach opens next week and will stay open until mid October. That was one concern, that after Labor Day, when they stop charging an entry fee, they'd close the restrooms too- but now we know they don't.
Alright, well here are some pictures of our day at the beach!

The two pictures above are from the City Beach.
----------------------------------------------------
These are from North Beach Park! :)

Had to post this one! It cracks me up, I told him he looks like a little kid :)

This is across the road from the beach, there are HUGE dunes on the other side of the road, there is actually a bunch of steps that go really high up on top of the dunes. On a side note, you can tell how windy it was because there is sand like covering the parking lot.

Here is the parking lot. It's pretty big, so that is a good thing! The city beach has VERY little free parking so it's usually taken pretty darn quick.

Scott sitting on a dune at the beach.

This was a sand dune that was on the beach, it's pretty big, but not nearly as big as the ones across the street.

Scott and I made Easter sugar cookies yesterday. They started out pretty basic, then we got more creative. Oh and they aren't cooked dark, I made them using wheat flour.

In the above picture, the top 2 Scott made. The one on the left was real cool, he made an Easter basket then the other one is suppose to say Bunny love. lol what a dork! Then the bottom 3 I made.

In this picture Scott made the bunny on the bottom, then the other bunny to the left, he said its' supposed to be a bunny juggling easter eggs, but he made too many eggs, he should've stuck with like 3, but he made him juggling like 7! :)

Well, thats all for now! We are going to head to the zoo for a bit, Scott really wants to go. Then back to make Easter dinner. We are having stuffed mushrooms, ham, a rice pilaf with oranges and walnuts and sauteed asparagus and fresh pineapple. Happy Easter!!
